Always Preheat

Light up the grill, close the lid and wait 10 to 15 minutes. Preheating the grill will keep your food from sticking to the grate and ensure even cooking.

Know When to Be Direct—and When to be Indirect

Small piece = direct heat

For direct heat, place your piece and cook it directly over the fire.

Large piece = indirect heat

For indirect heat, place food next to the fire, not directly over it. Close the lid to hold in the heat. This turns the grill into more of an outdoor oven.

Utilize the Lid

Here are 4 important reasons why the lid should be closed as much as possible:

  1. It keeps the grates hot enough to sear the food.
  2. It speeds up the cooking time and prevents the food from drying out.
  3. It traps the smokiness that develops when fat and juices vaporize in the grill.

Watch the Time and Temperature

Use a timer! Nothing is worse than overcooked meat (well, except maybe undercooked meat). Make sure you’re paying attention to the amount of time meat has been on the grill and always use a meat thermometer. Also take into consideration outdoor temperatures. For example, if you are grilling in a colder climate or in a higher altitude, chances are your cooking times will be longer.
